Coconut Marinated Tandoori Chicken

Coconut Marinated Tandoori Chicken - EasiYo NZ

Ingredients
  • 500g boneless chicken thighs
  • ½ cup EasiYo Greek Style Coconut Yogurt
  • Salt and pepper
  • 3-4 Tbsp oil
  • Handful of fresh coriander leaves to garnish
  • 2 limes to garnish
Dry Rub
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2-4 Tbsp Kashmiri chilli powder (or regular chilli powder)

Method

  1. Cut the chicken into thick finger like pieces. 
  2. In a bowl mix all the dry rub spices together.  Add the chicken and rub the spices into the chicken pieces.  
  3. Season and add the yogurt and lime zest and stir until all combined and the chicken is well coated.   
  4. Cover and leave in the fridge to marinate, preferably overnight.  Heat a heavy based fry pan and add the oil.  Cook in small batches until golden and cooked through.  
  5. Pile onto a platter and garnish with fresh coriander leaves and fresh lime wedges to the side.
