Corn Fritters

Corn Fritters | EasiYo NZ

Makes 10-12

Ingredients

  • 1 egg
  • ½ cup EasiYo Greek Style Unsweetened Yogurt
  • 1 tsp curry powder
  • 1 Tbsp lemon juice
  • 2 spring onions, finely chopped
  • ¼ cup chopped fresh coriander
  • 2 cups whole kernel corn, well drained
  • ¾ cup self-raising flour, sifted
  • salt and freshly ground pepper
  • vegetable oil for frying

Method

In a bowl beat together the egg, yogurt, curry powder and lemon juice. Add the spring onion, coriander, corn kernels, seasonings and the flour. Stir to combine.

Heat a little oil in a heavy-bottomed frying pan over medium heat. Drop spoonfuls of the batter into the pan, taking care to leave enough room between the fritters to turn easily. Cook until golden-brown on each side.

Transfer the cooked fritters onto a plate covered with paper towels and drain. Keep warm until ready to serve.

    Serve with EasiYo Greek Style Yogurt and sweet chilli sauce or chutney.
