Apple Bread

Apple Bread - EasiYo NZ

Ingredients

  • 1 cup wholemeal flour
  • 1 cup plain flour
  • ½ cup oat bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ cup walnuts, coarsely chopped
  • 2 apples, peeled and finely chopped
  • 1 egg, lightly whisked
  • ¾ cup EasiYo Natural Yogurt
  • ½ cup golden syrup
  • 3 Tbsp vegetable oil
  • 1 tsp vanilla essence

Method

  1. Preheat the oven to 180°C.  Lightly grease a loaf tin.
  2. In a large bowl sift both kids of flour.  Add the husks from the wholemeal flour into the bowl.
  3. Add the oat bran, baking powder, baking soda and cinnamon.
  4. Stir in the walnuts and chopped apples.
  5. In another bowl combine the egg, yogurt, golden syrup, oil and vanilla essence.
  6. Pour the liquid ingredients over the flour mixture and stir to combine - do not over-mix.
  7. Pour in the batter and bake for about 1 hour or until a cake skewer inserted in the centre comes out clean.
  8. Remove from the oven and allow to cool in the tin for 10 minutes.
  9. Turn onto a wire rack to further cool.
