Apple Bread
Ingredients
- 1 cup wholemeal flour
- 1 cup plain flour

½ cup oat bran
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ cup walnuts, coarsely chopped
- 2 apples, peeled and finely chopped
- 1 egg, lightly whisked
- ¾ cup EasiYo Natural Yogurt

½ cup golden syrup
- 3 Tbsp vegetable oil
- 1 tsp vanilla essence
Method
- Preheat the oven to 180°C. Lightly grease a loaf tin.
- In a large bowl sift both kids of flour. Add the husks from the wholemeal flour into the bowl.
- Add the oat bran, baking powder, baking soda and cinnamon.
- Stir in the walnuts and chopped apples.
- In another bowl combine the egg, yogurt, golden syrup, oil and vanilla essence.
- Pour the liquid ingredients over the flour mixture and stir to combine - do not over-mix.
- Pour in the batter and bake for about 1 hour or until a cake skewer inserted in the centre comes out clean.
- Remove from the oven and allow to cool in the tin for 10 minutes.
- Turn onto a wire rack to further cool.
