Asparagus, Feta & Yogurt Frittata | EasiYo NZ

Ingredients

  • 2 Tbsp butter
  • ½ red onion, finely sliced
  • 1 bunch asparagus, cut into thirds (ends trimmed)
  • 2 cups spinach, roughly chopped
  • 8 eggs
  • ½ cup feta cheese
  • ¾ cup EasiYo Greek Style Unsweetened yogurt
  • 2 Tbsp parsley, chopped
  • ¼ cup parmesan cheese
  • Salt and pepper

Method

  1. Preheat oven to 180°C.
  2. Melt butter in an oven proof pan over a medium heat. Add onions and cook for 2-3 minutes.
  3. Add asparagus and cook for 3 minutes and toss through spinach.
  4. In a bowl, whisk eggs, feta, EasiYo Greek Style Unsweetened yogurt and parsley.
  5. Pour mixture into the pan and sprinkle with parmesan before seasoning with salt and pepper.
  6. Cook for 5 minutes before transferring to the oven to cook for a further 15-20 minutes.
  7. Allow frittata to stand for 5 minutes before serving.
