Asparagus, Feta & Yogurt Frittata
Ingredients
- 2 Tbsp butter
- ½ red onion, finely sliced
- 1 bunch asparagus, cut into thirds (ends trimmed)
- 2 cups spinach, roughly chopped
- 8 eggs

½ cup feta cheese
- ¾ cup EasiYo Greek Style Unsweetened yogurt
- 2 Tbsp parsley, chopped
- ¼ cup parmesan cheese
- Salt and pepper
Method
- Preheat oven to 180°C.
- Melt butter in an oven proof pan over a medium heat. Add onions and cook for 2-3 minutes.
- Add asparagus and cook for 3 minutes and toss through spinach.
- In a bowl, whisk eggs, feta, EasiYo Greek Style Unsweetened yogurt and parsley.
- Pour mixture into the pan and sprinkle with parmesan before seasoning with salt and pepper.
- Cook for 5 minutes before transferring to the oven to cook for a further 15-20 minutes.
- Allow frittata to stand for 5 minutes before serving.
