Boysenberry Sponge Swirl
Ingredients
- 1 packet Boysenberry Jelly Crystals (85g)
- 1¼ cups boiling water
- 1½ cups EasiYo Greek Style Unsweetened Yogurt
- Small sponge cake, cut into slices or cubes
Method
- Dissolve the jelly crystals in the boiling water and set aside to cool. Reserve 2 tablespoons of the jelly mixture for decorating.
- Once cooled, gently fold the EasiYo Greek Style Unsweetened Yogurt through the remaining jelly, leaving a few swirls for a marbled effect.
- Layer the sponge cake in the base of a serving bowl or individual glasses, then spoon over the yogurt and jelly mixture.
- Refrigerate until set.
- To finish, drizzle over the reserved jelly crystals for a decorative finish.
Serve chilled.
