Chocolate & Orange Cake
These fuss free orange chocolate cakes make a simple yet luxurious treat. The ganache is made from yogurt rather than cream, so you’ll feel extra good about dishing up dessert!
Ingredients
- 100g butter
- 100g dark chocolate, 50%
- 1 ½ cups (300g) sugar
- 2 eggs
- ½ cup (40g) cocoa
- 1 ½ tsp baking soda
- 1 ⅓ cup (170g) plain flour
- 2 Tbsp orange zest
- ¾ cup (175ml) milk
- ¾ cup (175ml) Vanilla Yogurt
Chocolate ganache:
- 150g dark chocolate, 50% chopped
- 150g Greek Style Unsweetened Yogurt
- Extra zest and chocolate to decorate
Method
- Preheat the oven to 160°C and line medium-sized cupcake tins* with cupcake papers or baking paper.
- Melt the chocolate and butter together.
- Place the eggs & sugar into a food processor and whizz until mixed.
- Add the cocoa, baking soda, flour, orange zest, milk & yogurt and pulse until just mixed.
- Pour in the melted butter and chocolate and mix briefly.
- Spoon into the prepared tins and bake for 20-25 minutes*.
- Test with a skewer, and once cooked through, allow to cool.
- To make the ganache, melt chocolate over a bowl of boiled water.
- Remove from the heat and stir in the yogurt until smooth.
- Spread over the cakes immediately and leave to set. Decorate with extra orange zest and chocolate chunks or grated chocolate.
*To create a full sized cake instead of mini cakes, line a 23cm cake tin with baking paper, and alter cooking time to 50-55 minutes.
