In a large bowl, toss chicken in yogurt. Cover and chill for at least 1 hour to marinate.
Place flour, oregano, spices and salt in a shallow bowl, mix well and dip each piece of marinated chicken into the flour mix until evenly coated.
Heat a large nonstick pan on medium heat with a bit of oil and cook chicken for about 6-8 minutes each side, or until cooked through. Allow chicken to rest while you make the slaw.
In a large bowl, toss together cabbage, spring onions and parsley.
Combine yogurt, mayonnaise, lemon juice, and mustard together and season with salt and pepper to taste. Mix slaw and dressing together until well combined.
To prepare burgers, slice buns in half, layer chicken with slaw on top and add a dollop of your favourite relish or pesto to serve.
