Cucumber & Walnut Salad with Yogurt Dressing - EasiYo NZ

Salad Ingredients
  • 1 large cucumber
  • 1 tsp salt
  • 1 tsp sugar
  • ¼ red onion, thinly sliced
  • 1 garlic clove, minced
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp dill, chopped
  • ½ cup walnut pieces, toasted
Dressing Ingredients
  • ⅓ cup EasiYo Greek Style Unsweetened Yogurt
  • 1 Tbsp apple cider vinegar
  • 2 tsp oil
  • ¼ tsp honey
  • Pinch salt and pepper

Method

  1. Cut cucumber into 5cm long batons. Add cucumbers to a colander and toss with salt and sugar. Let the mixture stand for 30 minutes.
  2. Meanwhile, mix onion and garlic with 1 tablespoon of apple cider vinegar.
  3. When 30 minutes has passed, gently squeeze cucumbers dry with paper towels, and add to a clean bowl. Add onion and garlic mix (don't drain), fresh dill, and walnuts to the bowl with cucumbers.
  4. Whisk together dressing ingredients, and toss throughout the cucumber salad, coating well, or drizzle over just before serving.
  5. Serve immediately, or cover and refrigerate for later.
