Dried Fruit Compote with Breakfast Biscuits
Makes 12
Ingredients
- 1 1/2 cups dried fruit (apricots, dates, prunes, cranberries, fig and mango)
- 1 1/2 cups water
- 1 cinnamon stick
- 1 star anise
- 2 Tbsp honey
- 1 piece of orange peel
Cereal Biscuits
- 2 egg whites
- 1 Tbsp caster sugar
- 1 pinch of cinnamon
- 1 1/2 cups of your favourite toasted muesli
EasiYo Yogurt to serve
Compote Method
- Simmer the dried fruit with water, cinnamon, anise, honey and orange peel until glossy and syrupy.
Cereal biscuits Method
- Place the egg whites in a large bowl with caster sugar in the muesli and beat until white and foamy. Stir in the muesli and mix until well coated.
- Place spoonfuls on a lined baking tray and spread out into even circles with the back of a spoon. Bake at 170°C for 8-12 minutes or until golden.
- Let cool and set then store in an air tight container for up to a week.
- Serve your favourite EasiYo yogurt with a good spoonful of compote and a cereal biscuit on the side.
