Spinach Salad with French Dressing
Serves 4
Salad Ingredients
- 2 bunches spinach, washed and trimmed
- ½ cup sliced sun-dried tomatoes
- 1 cup halved cherry tomatoes
- 1½ cups croutons
- ½ -1 cup yogurt french dressing
- ¼ cup shaved parmesan cheese
Yogurt French Dressing Ingredients
- 1 cup Greek Style Unsweetened Yogurt
- 1 tsp french mustard
- 4 Tbsp light olive oil
- 2 Tbsp lemon juice
- salt and freshly ground pepper
Method
- To make the yogurt dressing, place all the ingredients in a jar with a screw-top lid. Shake until thoroughly blended. Taste and adjust the seasonings if necessary. Alternatively, place ingredients in a bowl and stir or whisk until well combined.
- To make the salad, tear the spinach into bite-size pieces. Place the spinach, tomatoes and croutons in a salad bowl. Spoon over the dressing and gently toss to coat leaves. Sprinkle with the parmesan cheese and serve immediately.
VARIATIONS
- For Garlic and Yogurt French Dressing add 1-2 peeled and crushed garlic cloves.
- For Fresh Herb Yogurt French Dressing, add 2-4 tablespoons finely chopped fresh herbs
