Strawberry Muffin Ice Cream Sandwich
Celebrate summer with strawberry muffin ice cream sandwiches! The perfect treat for a hot summers day.
Ingredients
- 2 cups plain flour
- ¾ cup caster sugar
- ½ tsp baking soda
- 2 tsp baking powder
- 2 eggs
- ½ cup rice bran oil
- 1 cup EasiYo Greek Style Unsweetened Yogurt*
- 1 tsp vanilla essence
- 250g ripe strawberries, diced
Method
- Preheat oven to 180°C and line a muffin tray with papers.
- In a large bowl combine the flour, sugar, baking soda and baking powder and whisk together.
- In a separate bowl whisk the eggs, oil, yogurt and vanilla together until well combined.
- Spoon out evenly into the prepared muffin tray and bake for 15-20 minutes or until the tops are golden and spring back when gently pressed.
- Remove from oven and allow to cool.
- Cut in half and sandwich frozen yogurt or ice cream
Notes:
- Dust with icing sugar if desired
- You can substitute any berries or diced ripe stone fruit like apricots, peaches or plums
