Stuffed Mushrooms
Ingredients
- 100g crumbled feta cheese
- 1 small onion, peeled and finely chopped
- 2 cloves garlic, peeled and finely chopped
- ½ cup chopped ham
- ¼ cup chopped parsley
- 1 cup wholemeal breadcrumbs

½ cup EasiYo Natural Yogurt
- salt and freshly ground pepper
- 12 portabello mushrooms
- olive oil for drizzling
Method
- In a bowl combine the first eight ingredients and mix well.
- Clean the mushrooms by wiping them with absorbent paper towels, then place skin-down on a baking tray.
- Spoon a little of the mixture onto each mushroom and spread so it forms an even layer.
- Drizzle a little oil over each.
- Place under a hot grill for about 10 minutes or until the mushrooms soften and the topping turns golden and is starting to bubble.
- Serve immediately.
