Easy Coleslaw

Easy Coleslaw - EasiYo NZ

Ingredients
  • ¼ green cabbage, finely sliced
  • ¼ purple cabbage, finely sliced
  • 4 spring onions, thinly sliced
  • 4 Tbsp parsley, chopped
  • ⅓ cup EasiYo Greek Style Unsweetened Yogurt
  • 2 Tbsp mayonnaise
  • Juice of ½ lemon
  • ½ tsp Dijon mustard
  • Salt and pepper

Method

  1.  In a large bowl, toss together cabbage, spring onions and parsley.
  2. Combine yogurt, mayonnaise, lemon juice, and mustard together and season with salt and pepper to taste. Mix slaw and dressing together until well combined.
  3. Serve with Chicken Burgers or as a side to your meal.
