Easy Yogurt Focaccia
Ingredients
- 3 cups self-raising flour
- 2 tsp salt
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 ½ cups EasiYo Greek Style Unsweetened yogurt
- 1 Tbsp olive oil
- ¼ cup pitted black olives, chopped
- 2 Tbsp fresh rosemary, chopped
Method
- Preheat oven to 180°C and grease a 20cm x 30cm lipped oven tray with oil.
- Sift flour, salt and dried herbs into a bowl, stir to combine and make a well.
- Add yogurt and oil and mix until just combined. Turn dough out onto a floured surface and knead for about 2 minutes.
- Press dough into the prepared tray and use your finger tips to press light dimples into the dough.
- Press in olives and rosemary gently, brush with oil and season with salt.
- Bake for 30-35 minutes until golden.
- Allow to cool for 10 minutes before serving with Garlic Herb Butter.
